Following graduation, she worked for the March of Dimes while continuing to perform in community theatre.

Pedi's Broadway career spans from 1996 to 2013 and encompasses both musicals and plays. In the 1998 revival of Little Me, she took on multiple roles, among them Maid, Ms. Kepplewhite, and Secretary. Off-Broadway, Pedi became closely associated with the Forbidden Broadway franchise, appearing in multiple editions across more than a decade. Pedi also appeared in Forbidden Hollywood at the Triad Theatre from March 10 to September 1, 1996, having previously performed in the same production at the Coronet Theatre in West Hollywood, California, from April through May 28, 1995. She additionally appeared as Bernadette Peters, Barbra Streisand, Carol Channing, Liza Minnelli, and Patti LuPone in Gerard Alessandrini's musical parody Spamilton in its original Off-Broadway production in 2016 and in the Chicago production in 2017.
