Hurlbert first gained widespread recognition as the runner-up on the MTV reality competition Legally Blonde: The Musical – The Search for Elle Woods. Following the conclusion of filming, she joined the Broadway cast of Legally Blonde: The Musical, remaining with the production until it closed on October 19, 2008. During her time with the show, she also understudied the roles of Elle and Margot. In October 2012, Hurlbert headlined the production as Elle Woods at the North Carolina Theatre, in a staging directed by Denis Jones. Her Broadway credits additionally include Tammy Faye, Something Rotten!, and the play Little Women, the latter of which she had also performed in the first national tour.

In 2012, she played Sybil in Noël Coward's Private Lives at the Huntington Theater in Boston, directed by Maria Aitken, a role she reprised in spring 2014 when the production transferred to the Lansburgh Theatre at the Shakespeare Theatre Company in Washington, D.C. Also in 2013, she played Samantha in the Off-Broadway musical Nobody Loves You at Second Stage Theatre and appeared as Dancer #11 in NBC's The Sound of Music Live! television special, broadcast on December 5, 2013.
